We are seeking a passionate and detail-oriented member to join our team. This position will be responsible for producing high-quality, hand-crafted cheeses using traditional and modern methods. This role requires a strong understanding of dairy science and food processing, excellent sanitation practices, and a love for the craft of cheese-making.
Responsibilities would be as follows:
- Produce a variety of cheeses including soft, semi-soft, hard, and aged styles following established recipes and processes.
- Monitor milk quality and handle milk processing, curd cutting, draining, molding, pressing, brining, and aging.
- Maintain cleanliness and sanitation of all equipment, tools, and production areas in compliance with food safety regulations.
- Monitor cheese during aging/ripening stages and perform turning, washing, or other care techniques as required.
- Record and track batch data, including temperatures, pH levels, yields, and observations for quality assurance.
- Package and label cheeses for distribution or retail sales.
- Collaborate with the team on developing new cheese types, flavors, or improvements.
- Comply with all local and federal food safety regulations (e.g., HACCP, FDA, USDA, etc.).
